Portland Goes Swedish: Fill Your Belly at Ingrid’s Scandinavian Food Truck

Parked in the 28th and SE Division St. food truck park, this place offers sweet and savory snacks all the way from Norway and Sweden. The cheery looking outlet is owned and operated by mother-daughter team Cathy Cleaver and Ingrid Legore. Hailing from the Pacific Northwest, the two spent years making meals with Ingrid’s grandfather, using recipes passed down through the generations in their Scandinavian-American family.

In 2014, after a long time perfecting various dishes, the pair decided to take their culinary skills to the streets and opened their own food truck. One year later, the lines of customers wind down the block.

On the menu you’ll find savory wraps made from spongy, light lefse – a Norwegian flatbread made from potatoes and flour. Lefse is crêpe-like in texture and needs to be elastic and springy but also strong and fluffy in order to hold a whole host of yummy fillings. It’s a recipe that requires deft hands, strong arms and good intuition – hardly a problem with these two women in charge.

Their wraps are filled with goodies like meatballs, smoked salmon, surkål (think sauerkraut, but more colorful), gjetost cheese and arugula. The result is food that is filling and light all at once, with flavors that are powerful but not overwhelming. Be sure to ask for a big glass of sparkling lingonberry lemonade to wash it all down.
