Mistura<\/a>, el festival gastron\u00f3mico en Lima, se lleva a cabo cada a\u00f1o, uniendo casi 200 vendedores ofreciendo las delicias peruanas que provienen de cada rinc\u00f3n del pa\u00eds. Es la oportunidad ideal para probar los sabores y tradiciones de Per\u00fa en un solo lugar… pero las opciones pueden ser abrumadores.<\/p>\n

Anticuchos<\/h2>\n

La palabra anticucho significa carne estofada. Por lo regular, refiere a la merienda callejera de coraz\u00f3n de carne de res, asada sobre un palito, t\u00edpicamente servido con una papa pelada. En Mistura, puedes probar los anticuchos hechos de coraz\u00f3n de alpaca.<\/p>\n

Ceviche<\/h2>\n

El ceviche es el platillo m\u00e1s famoso peruano. Se hace con cubos o tiras de pescado crudo o mariscos, mezclados con una salsa picosa y c\u00edtrica que se llama leche de tigre. Hay muchos vendedores de ceviche en Mistura y cada cual tiene su propia versi\u00f3n de leche de tigre. Algunos incorporan m\u00e1s frutas o m\u00e1s chile. Otros usan trucha. Prueba unos cuantos para descubrir tu favorito, y no te pierdes las versiones m\u00e1s fuertes, las cuales llevan una guarnici\u00f3n de pescado frito. Casi todos los ceviches peruanos se sirven con el camote cremoso y una cancha salda arriba.<\/p>\n

La causa es una especia de terrina peruana que data a la \u00e9poca precolombina. Se hace con capas de papa majada con aj\u00ed amarillo y una variedad de otros rellenos: at\u00fan, pollo rostizado, pulpo, o quinoa.<\/p>\n

Cuy<\/h2>\n

Cuy es una favorita andina. Cuy a la palo<\/em> se hace en un palito sobre fuego vivo hasta que tuesta el piel y la carne se quede suculenta. Puede ser costoso sacara la carne de los huesos peque\u00f1os, pero vale la pena. Aviso: Los vendedores de cuy tienden de tener las filas m\u00e1s largas en el festival de Mistura.<\/p>\n

Juanes<\/h2>\n

Proveniente de la jungla de la Amazona viene juanes, una especia de tamales de la jungla. En vez de ma\u00edz, se hace con arroz, carne, y un pedazo de huevo hervido, todos ahumados en una hoja de bijao.<\/p>\n

Tacachos<\/h2>\n

Tacachos son bolitas de pl\u00e1tano machacado con pedacitos de chicharr\u00f3n<\/em> <\/i>o cecina. Los tacachos son densas y te llenan.<\/p>\n

Rocoto relleno<\/h2>\n

Arequipa, la segunda ciudad m\u00e1s grande de Peru, afirma que es el lugar natal del rocoto relleno. Es una variaci\u00f3n del pimiento relleno, hecho con el pimiento rocoto. Lo rellena con picadillo, con una capa de queso y salsa bechamel.<\/p>\n

Arroz con pato<\/h2>\n

Desde el norte de Peru viene arroz con pato, lo cual consiste de un pedazo de pato rostizado sobre un arroz de cilantro.<\/p>\n

Cerveza<\/h2>\n

Hace poco se agregaron una peque\u00f1a zona de cervezas a Mistura. Es una manera de celebrar la creciente escena de cervecer\u00edas \u201cmicro\u201d en el pa\u00eds. Adem\u00e1s, las cervezas van bien con toda la comida.<\/p>\n
